• Rochè di Fiore Sardo, Ricotta and Orange

• Raw red prawn, heart of lettuce and lemon (Air and Sauce)
• Torcione of Duck Foir Gras, Pan Briosche, Mandarin Chatney
• Seared scallop, asparagus cream and salmon roe

•  Snapper tortelloni, tomato and burrata soup, capers and anchovies

•  Roast lobster and rabbit, vegetables and port and black truffle sauce.
